This last week I was stuck home with a terrible cold. I don’t know about you, but when I get a cold I want nice hot soup goodness to make me feel better. Of course I didn’t have all the ingredients so I actually drove to our local produce stand in less than desirable attire and picked up some fresh veggies for this easy tortilla soup recipe
Place broth, water, chopped onion, garlic and celery with tops on in your favorite large soup pot. Cook chicken at a low boil with bone until meat is ready to fall off
When chicken is cooked remove from pot, when cool, take away skin and bones, place chicken back in the pot. Add remaining ingredients and seasonings and cook until veggies are soft. I suppose you could add some sort of chile to the recipe such as a jalepeno if you want some extra kick, I don’t do this but would be fun to try for those that like more spice
When veggies are cooked, place in your favorite soup bowl and add toppers
Cilantro coursley chopped
Cheese shredded, I use cheddar because that is what I usually have but a Queso Fresco would work nicely too
Avocado chopped
Green onion chopped
Lime add a squirt to your soup, adds a nice finish
Tortilla chips crunch them up. I rarely get to have these so when I do it is a real treat
There you have it, a nice hot, healthy soup for a cold winter day. This soup will surely make you feel better if you are under the weather and is packed with lots of good veggies to get you well again. It is nice and easy and oh so good.

Just like you, I want soup when I don’t feel well. The great thing about this recipe is i always have all these ingredients on hand. Even the chips. And it seems so easy to make. Might do it in my slow cooker. Pinned too.

If only more people realised that when a nasty cold strikes, what we most need is rest and nourishment; not to pop pills and carry on! Thank you for this goodness-packed recipe. It sounds divine and I love the idea of of tortilla chip “croutons”! As we transition into the warmer months here in the UK I find that raw juices and smoothies are all I feel like if I’m ever feeling under par. But during the cold months (of which we have plenty) my go-to is always a healthy, wholesome veg soup 🙂
